Susie's Guacamole Recipe!

Long time no post everybody :) Today I’m back with another recipe post - this one isn’t Korean, but its a personal favorite that I’ve perfected over the course of a year so I figured it would be ok to post ^_^ ~ Here's what you'll need:

3 Avocados

2 Roma tomatoes

1 Small onion

A handful of cilantro

1 Jalapeno

1/2 of a large sized lime OR 1 small lime

Salt

Pepper

Optional: Cumin, Sriracha

1 Mixing bowl

1 or 2 storage containers, depending on the size

1 Spoon

1 Fork if needed

This recipe is pretty self explanatory- you just cut everything up and pop it into a mixing bowl :D

For the avocados, I’ve seen several methods as to how to mash them, but I find that simply cutting them in half and cutting them into a grid-like shape before you scoop them works the best. This requires the least mashing in the long run~!

Grid all your avocados, scoop them with a spoon and place them into a mixing bowl.

Then, dice your tomatoes - I usually use 2 Roma tomatoes, but I’ve also used regular ones and they work fine. However, just make sure to keep an eye on how much you’re putting in as you mix them so you don’t accidentally put too many in.

When dicing the tomatoes, the size of them is up to you, but make sure to squeeze the juice out of the pieces. To do this, just grab a handful of tomatoes after they’ve been diced and squeeze with both hands over the sink. I usually eat my guac over the course of 2 days, so this helps reduce the amount of weird brown juice that comes out of the guac after a day or two in the fridge. Even if you’re going to be eating it immediately, I still recommend doing this step as it helps to decrease the guac from getting too “soupy”/“creamy”— we’ll be getting plenty of liquid from the lime juice later on anyways.

For the onions, try and finely chop around 3/4 to 1 small red onion. I find that the red onions are a little bit sweeter in taste and less “spicy” (I’ve seen other people soaking onions in water to try and reduce the spicy taste..you could try that if you’re sensitive to the spice, but I think chopping finely is good enough for me~ )

Next, finely chop up your jalapeño after you remove the seeds and weird guts on the inside ^_^ Afterwards, grab a handful of cilantro and finely chop it up with a knife. If you don’t like the taste of cilantro, you can take it out, but try using cumin instead (I’ve personally never used this, but I heard that its a great spice that makes everything taste like tacos ;) )

After you’ve added all of the above ingredients to your bowl, go ahead and give it a good mix to determine if you want to add more of any ingredient.

Finally, cut your lime in half and squeeze it over your mixture. While you’re stirring, be sure to pay attention to the texture and mash it up if you want it to be smoother, or fold slowly with your spoon if you want it to be chunkier.

Lastly, go ahead and add a nice amount of salt and pepper to spice up the flavor of your guac! Don’t be too afraid if you seem as if you’re adding too much - avocados naturally need some salt to accentuate their flavor :)

Aaaand thats it! There you have it - some delicious guac ^_^ ! Spread over toast, eat with chips, or pop on top of tacos for a great spike of flavor! :-)
